Wizards has done it for Red Hand of Doom, and as a "laptop behind the screen" DM, I found this digital document tremendously helpful. If Paizo needs "hands and sweat" to put this online, I can help with some page layout skills, and I am sure other fans could help for final editing.
I love this idea, As I play though the hard cover of scap I find it hard on my small table to flip from chapter to apendex to find this monster and the other one. While I wouldn't be adverse to having stat blocks of all the adversaries, I don't know whether that would be high on Paizo's list of things to do.
